    I probably eat at least 7-12 servings a day of fruit and veggies (more fruit then veggies but, I am working on it.) I probably eat as much as I do because I am a vegetarian and get more than the average meat eater. - 7/17/2011   9:54:44 PM

    I can almost say, "I never met a vegetable I didn't like." I always eat at least 5 vegetables and fruits and have been known to eat as many as 14 in one day.

    I love the Italian cold or room temp cooked vegs - I made peperonata over the weekend (just bell peppers and onion, slow sauteed in a little olive oil, with a spoonful of balsamic vinegar tossed on top at the end), and will eat that all week.     I use my Jack La Lanne's power juicer and juice all most of my veggies and fruit combinations so I have fresh juice without the added perservatives and sugars. - 6/19/2011   4:03:50 PM

    I love salad. BIG salads with lots of variety! The bagged salads make it so easy to toss together a meal in minutes. I take a large (minimum 4 cups) salad to work for my lunch every day. A banana or an orange for a snack. And because I love sweet peppers, I buy 3 or 4 at a time, clean and slice them into 200 gram portions, and add that to my lunch bag for a treat!     I'm always shocked and mystified that there are people out there who just choose to never eat vegetables. Even here on Spark, there are people who want to know how to be healthy without eating any produce! News flash: you can't! So just... eat them! They're good for you! I get about 7 servings a day because I rarely eat grains or starches, and I'm always super full, satisfied, and healthy because of it! - 6/18/2011   8:14:47 AM

    I'm not fond of leafy salads, but since I know I should eat them, I have used this idea. Twice a month I buy a bag of organic "spring mix". Whenever I have grain-and-bean salad, chicken salad, pasta salad, coleslaw, even fruit and yogurt, I add a handful of greens to the bowl first. The other salad flavors the greens, and they become a pleasant and healthful addition. - 6/17/2011   4:09:35 PM

    not showing off here, but i must say, I pop my potassium chart evening evening after my food tracking. I have to be careful to not go over my potassium limit...and that's coz I am an avid vegetable eater. Not a vegetarian, but i loooooooooooooooove veggies more than meat and fruit. so I put a big heap of them on my dinner plate and less meat (which explains why the protein intake on my chart is always lower than it should be). i also don't lik efruit, but i try to swoop down a banana or half of one each day and that rises the potassium intake tremendously. Today, i had mangos, pineapples and half a banana, then i had a whopping salad just now (lettuce, avocado, carrots cauliflower, onions and tomatoes!) ...cool - 6/17/2011   1:49:04 PM

    Here is what I have learned. The more
    I eat fruits and vegetables,
    the more I want them! Now my
    body craves fresh organic fruits
    and vegetables like I used to crave
