assortment of herbs and spices or seasoned salt (I like Lawry's Garlic salt w/parsley)

Sometimes I leave out a dressing and just serve my main course right on top of the greens assortment.

1 cup of diced cucumbers
.75 cup diced tomatoes
.5 cup diced onions
mix together in a bowl with .25 cup of balslamic vinegar and a tablspoon of olive oil, add salt and pepper to taste.

I like asparagus cooked al dente and cooled. Serve on a Bibb lettuce leaf with a dressing of yogurt, mayo and curry powder.

100g green leaf (that's a lot!) shredded
40g OSO Sweet onion rings cut in half and separated
1/4 cucumber, sliced (preferably grown at home)
6 grape tomatoes, halved (preferable grown at home)
1/4c. plain cooked red beans (preferably cooked at home)
15g Rothbury Farms fat-free croutons
2T Homemade Vegan Spicy Honey Mustard Dressing (grape seed veganaisse base)
Serve with something pickled on the side! (spicy asparagus, tangy sweet red pepper, actual dill pickles without yellow dye, button mushrooms if you got 'em!).

Bring 2 cups of water to a boil, add 1 cup long grain brown rice, cover, reduce heat and simmer for 45 minutes. Let the rice cool and then add 1/4 cup diced red onion, 1/2 cup diced celery, 1/4 cup dried cranberries, 1/2 cup balsamic vinigrette dressing, 1 tablespoon sugar. Refrigerate. I divide mine into 4 servings so they are ready to grad at suppertime. 302 calories per serving.
